Oh, if I only had more time today! Sake is one of the most interesting adult beverages around, it is like wine but made more like beer...but in the end it is its own, it is Sake. A traditional rice based beverage from all over Japan that is generally consumed hot, (the heat covers the flaws of poor sake) in the US, and out of ceramic vases while you eat sushi. As with all things, the ability to travel quickly has increased the world's knowledge of high quality sake that is singular and deserves as much devotion and attention as the greatest of Grand Cru Burgundies or First Growth Bordeaux. Last night, Shauna and I had a full day of being a tourist in our "new" city and ended the evening meeting with new friends at a local Japanese restaurant, the Sake House. I ordered a bottle of Shichicken, not because I knew it but because the descriptor of crisp and light plus the price ($35 for 720 ml) caught my eye. I am still quite the novice to sake but I know I really like and it pairs so well with the delicacy of sashimi and the earthiness of soba noodles. I highly recommend, if you have not already, starting to explore sake.
