Shauna and I just finished our Bastille Day dinner while listening to my Pandora mix of French singers. Even though it is "Monday Night" wines, I'm going to post what we had tonight in honor of our friends in France. Since my first trip to France I have been in love with the wines and have always enjoyed the sparkling wines. Almost every wine region in France produces sparkling wines (many in the Champagne method) and they are, for the most part, pretty darn tasty and not very expensive. As I have said before don't hold back on the bubbles for just special occasions, everyday is a good day to drink bubbles.

Tasting Notes: This wine has always been a favorite of mine. It is not very complex but it is very tasty. The wine is a pale salmon pink and has fine bubbles that waltz in the glass. The nose is what gets me. It has aromas of strawberries still on the vine, cherries just picked and crushed red berries. There is a subtle hint of flowers, not just one but an elegant and understated bouquet given to one that your really love. The palate is soft and delicate with fine bubbles that liven up the soul. The fruit aromas take center stage just as they do on the nose. The wine has immense structure and length. A wonderful bottle of sparkling to enjoy summer. Sparkling wines are not just for before dinner but do well with food too! This wine has ample fruit to stand up to some mildly spicy dishes, grilled salmon, or a summer pasta dish with fresh tomatoes and mozzarella (not tomato sauce)
